Naan Pizza & Roasted Sweet Potatoes

A delicious snack . . .
Just to snack on, and as part of my lunch tomorrow, I roasted a sliced sweet potato - it's better than potato chips - no lie!



Slice a sweet potato, rub a very thin layer of olive oil on the slices by sprinkling the oil over the potatoes in a bowl and flipping them around with your hands. Lightly sprinkle them with kosher salt. Layer the slices on a cookie sheet lined with foil (makes cleaning easy) and roast in a 450 degree oven until they are soft (30 - 45 minutes). Yum!

Dinner . . .

My dinner tonight was pizza made on naan bread. Rub olive oil on the naan bread, add a minced garlic, throw on some onions (preferably caramelized), some mushrooms (preferably caramelized), a handful of baby spinach, a layer of sliced fresh mozzarella and a sprinkling of parmesean reggiano cheese. Bake at 450 degrees until the cheese melts to your liking. I like to line the cookie sheet with foil so I don't have to deal with cleaning melted cheese off the pan. Just roll it up and throw it out - nice.
