Burrito Innards

What's in my fridge? Enough to make an almost complete burrito. So here it is and it turned out pretty tasty.

It looks a little disgusting, but this is a big plop of refried black beans (made without any fat and lower in sodium than other brands - read the labels!) topped with a sprinkling of chopped white onions.

Top with shredded sharp cheddar cheese.

I hate to say it, but nuke it until the cheese melts. OR, if you are feeling ambitious, use the oven to melt the cheese.

Top with your favorite salsa and if you like it, cilantro. I LOVE cilantro. It's like a mouthful of Spring.
